Yum!

Wow!  Jerk tempeh tacos!!!  This supper totally came together by accident (I was too lazy to make a real dish and searched for leftovers) and ended up being CRAZY good.  I made some jerk tempeh the night before and we had a lot left (nothing too exciting, just sliced tempeh marinated in jerk seasoning and some EVOO, then cooked in a non-stick in a bit of coconut oil).  I also had a side of black beans and rice all mixed together and a left over roasted sweet potato.

I floated through the fridge and cupboards to see what was in there.  I found a half a head of cabbage, so I made a slaw with that, some grated carrot, lemon juice, salt and Veganaise.  I toasted some pepitas with salt, because they are crunchy and delicious (and the key to the taco)!  We also had some salsa verde, whole foods fresh corn tortillas, and Dayia cheese.  OMG, so crazy good.  Just a bit of all of this in a tortilla and, bam, best supper ever!  This meal rocked, I will be making this one over and over for Matt.


Though going through a bit of set back from last week, I still was able to "run" on the Alter-G a lot.  My stride is getting there, not 100% by any means, but not the worst thing ever.  Hopefully tomorrow the little flare ups that are plaguing me will get the heck out of here...I totally rested today except for stretching, so I'm feeling like a slug but hoping it'll pay off.  I think/worry my psoas is tight as heck and might need to get that worked on tomorrow in PT (those that have had this done know what I'm talking about), but if it helps to make me feel better then I'll deal with it with a smile (okay grimace) on my face.
